Brined Pork Chops

I make pork chops lots of different ways and truth be told, I don’t usually have enough forethought about what I’m cooking for dinner to brine my chops. However, grilling and frying pork chops does tend to dry them out and brining them will definitely make them better. So here’s one recipe for brined chops.

4 cups water

1 Tablespoon salt

1 teaspoon peppercorns

6 cloves garlic, smashed

2 bay leaves

1 teaspoon soy sauce

Put in a pot and boil 2-5 minutes, then cool to room temperature. Score the fat on the edge of your chops to keep them from curling up when you cook them, and soak in the brine for at least 30 minutes to overnight.

Before cooking, dry the chops with paper towels, coat with the following sauce, and let marinate at least one hour. Then fry on medium heat or grill.

Sauce:

1 tsp salt

1/4 tsp pepper

1 tsp brown sugar, packed

1 tsp paprika

1 Tablespoon soy sauce

1 Tablespoon oil
