DRESSING:
1-1/4 cup mayonnaise
1/4 cup sugar
1/3 cup apple cider or rice wine vinegar
1/4 tsp pepper
1 UUUGE head of cabbage, or two smaller heads
2-4 carrots, peeled and grated
3-4 green onions, sliced
(OR buy a two bags of cole slaw all shredded and ready to go)
That’s it. Whip up the dressing, toss it together, and enjoy. I mix it up right before serving so the cabbage is nice and crunchy. The longer it sits, the more watery the dressing and the more limp the cabbage gets. Although, it’s still perfectly good!
Kind of hard to tell how much coleslaw this dressing will cover, since it depends on how you like it. I used one bag of coleslaw, about half the dressing, served four with some leftover.
