I’m not really a fan of pancakes, first off. They’re kind of gummy and really have no redeeming food value. But on occasion, when I have some fresh blueberries hanging around, I make a kicked up version of pancakes that actually pass for food, taste pretty good, and aren’t very pretty. Oh yeah, high praise indeed! But seriously, it’s not always about eating what tastes the best or I’d be eating ice cream for breakfast, lunch & dinner. Really, I would. I’m not kidding. When I’m old and all hope is gone, I’m going to die with a pint of Ben & Jerry’s in one hand, and a spoon in the other. Until then…
PROTEIN POWER PANCAKES
1/2 cup oat flour
2 scoops protein powder (I use Bio Trust’s Vanilla Cream)
2 eggs
1/4 cup almond milk
1/2 tsp vanilla
hand full of fresh blueberries
syrup of your choice
I add a little butter to a skillet and cook the pancakes over medium heat. The recipe makes four pancakes, two servings. It’s easy to cut the recipe in half to serve one. Just don’t expect them to be pretty.
