This is a basic recipe that you can dress up any way you like. We like them with berries and lots of whipped cream. The recipe makes four big waffles. The recipe for sweet whipped cream is below as well. You shouldn’t need to add sugar to the berries unless they aren’t sweet, or you like them extra sweet. You could add berries and maple syrup, or ice cream with a little chocolate or caramel sauce and some nuts. But we’ll just stick with the berries and cream
Combine dry ingredients:
300g flour (2-1/2 cups)
150g sugar (3/4 cup)
2-1/2 tsp baking powder (aluminum free preferred)
Combine wet ingredients:
1 cup milk, plus more as needed
2 large eggs, room temp.
1 tsp vanilla
Mix the wet into the dry ingredients then gradually add
200g melted butter (3/4 c plus 2 Tbsp)
Whisk or beat until the batter is smooth and glossy, adding additional milk until it’s the right consistency.
Whipped cream:
1 cup cream
1/3 c sugar
1 tsp vanilla
Don’t use a plastic bowl. Make sure your bowl and beaters have to oil or water on them. The colder the cream, the better it will whip, & you can chill the bowl too if you like.
