4-5 lbs country style pork ribs
1 tsp salt
1/2 tsp pepper
1 onion, thinly sliced
1 Tbsp chili powder
1/4 cup brown sugar
1/8-1/4 cup white or apple cider vinegar (depending on how tangy you like it)
1/4 cup Worcestershire sauce
1 cup catsup
1 cup water
Trim as much fat from the ribs as you can. I usually cook them in a 9 X 13 Pyrex baking dish, but any baking dish will do. Bake them uncovered at 450 degrees for 45 minutes. Drain off liquid. Mix all the other ingredients together and heat to boiling or very close to it in the microwave or on the stove. (Mainly you just don’t want the liquid to be cold so it won’t cool down the meat or break your hot baking dish.)
Pour the sauce over the ribs. Reduce the heat to 350 degrees and continue baking, uncovered for 60-75 minutes until the sauce is thickened and the ribs are tender. Check during cooking and add a little water if necessary.
