Churros

2 cups water

2 Tbsp butter

2 Tbsp sugar

1 tsp vanilla

pinch of salt

Put in a pan and bring up to a simmer.

Remove from heat and add 2 cups flour. Beat with a mixer on high speed for one minute to cool slightly.

Add 2 eggs and beat for one more minute.

While still very warm, put into a parchment bag fitted with a large star tip.

Pipe onto parchment paper coated with cooking spray.

Chill in the refrigerator for 15 minutes so they will be firm enough to pick up and place into the oil to fry.

Fry at 375 degrees until well browned. Drain briefly on a wire rack, then roll in cinnamon and sugar. Keep warm in the oven.

Cinnamon Sugar Mixture: 1/2 cup sugar & 3/4 tsp cinnamon
