Noni’s cookie jar was always full, but I only remember her making these and persimmon cookies. She always added the raisins, but I prefer them without. These are heading off to a party with my Italian cousins. Hopefully they get thumbs up.
4 lg eggs
2 c sugar
2 tsp almond extract
4 T milk
1-1/2 c flour
2 tsp baking powder
1 c walnuts or pecans
1 c raisins (optional)
Butter the bottom and sides of a 9 X 13 pan. Dust the pan with sugar, then dust again with flour. Mix all the ingredients together and bake at 350 degrees about 30 minutes, until they test done. When the cake is done, let it cool for 5 minutes, then invert it onto a sheet of waxed paper and cut into squares.
