I have several people in my circle that are diabetic, or ketogenic, or lactose intolerant, or vegan, or…… So I’m always looking for some desserts I can make for them. This recipe is for a high protein, zero sugar, low fat, and can also be dairy free/vegan dessert that actually tastes good. How is that even possible? No idea, but it works. I call it chocolate snow because that’s exactly what it feels like when you’re eating it. Best of all, it doesn’t even have any weird taste.
400 ml almond milk
400 ml skim milk (Or you can sub whole milk, more almond milk, oat milk, cashew milk. Skim milk just has more protein.)
2 scoops or 66g chocolate flavored protein powder with no sugar (I use
6 g sugar free instant chocolate pudding (about 2 teaspoons)
2 Tbsp cocoa powder
40 g artificial sweetener, about 1/4 cup, or to taste. I also add a tiny bit of Stevia, but you’ll have to sweeten it to suit yourself before freezing. (I use Lakanto classic monkfruit with erythritol)
1 tsp vanilla
pinch of salt
I freeze it until it’s soft serve consistency, then transfer to some one pint containers & freeze. Microwave 45-60 seconds before eating as it will be rock hard if you don’t.
You can make it with different flavors of protein powder and different flavors of instant pudding mix. Flavors other than chocolate will usually require less sweetener.
