2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup sugar
1/2 cup softened butter
1 cup ricotta cheese
zest of one orange
1 large egg
1 tsp vanilla
1/2 cup dried cranberries (Craisins)
Beat everything together except for the cranberries. Stir them in last. Drop blobs of dough onto parchment paper and bake at 350 degrees for 12-15 minutes. If you’d like, you could mix up some powdered sugar with a few drops of orange extract and bit of milk and drizzle over the tops of the cookies after they’ve cooled. Or you could dust with a little powdered sugar before serving, just to add a little oomph.
