Lots of biscotti recipes call for anise. My son HATES anise, so for him, I make these biscotti. The brown sugar taste definitely comes through.
2 eggs
1/2 cup white sugar
1/2 cup brown sugar
3/4 cube butter, softened (6 Tbsp)
1/2 tsp vanilla
1/2 lemon, juice and zest
1/2 Tbsp baking powder (aluminum free)
1/2 tsp baking soda
2-1/4 to 2-1/2 cups flour
1/2 cup sliced almonds
1/2 cup dried fruit (I like dried cherries)
Cream the butter and sugars. Beat in everything except for the flour, almonds and fruit. Beat in the flour until it forms a dough that’s not too stiff but holds it’s shape. Stir in the almonds and dried fruit.
On a parchment lined baking sheet, form the dough into two logs. Drop the dough onto the sheet with a spoon, and use the spoon to smooth and shape it into logs. It doesn’t have to be perfect. It will smooth out and flatten as it bakes.
Bake at 375 degrees for 20 minutes or until golden brown.
Slice the logs diagonally into pieces about 1″ thick. Place the slices back on the baking sheet, one cut side up, and bake another 10-15 minutes until well browned.
