Green Chile Sauce

Good for chicken tamales, quesadillas, whatever

6 Anaheim chiles

4 Jalapenos

1 onion

8 cloves garlic

6 tomatillos

1 tsp salt

1 Tbsp garlic powder

1 Tbsp onion powder

1 Tbsp salt

Put on plastic gloves! Remove seeds and white ribs from inside peppers and cut in chunks. Cut onion in chunks, and garlic cloves in half. Boil peppers, onion and garlic for 15 minutes. Drain, reserving liquid.

Meanwhile, remove outer skin from tomatillos and wash off any slime. Cut in half and place cut side down on a baking sheet coated with cooking spray. Spray oil on top of the tomatillos and sprinkle with salt. Bake at 400 degrees for 15 minutes until soft.

Blend the peppers, onion, garlic and tomatillos, adding a little of the cooking liquid if needed to process into a smooth paste. Add the garlic powder, onion powder and salt. Bring to a simmer and cook for 15 minutes.
