Enchiladas

OK, I know this recipe sounds really stupid and no self respecting Mexican would ever call these enchiladas. But they’re good. And easy. Just bear in mind that tacos from Taco Bell and Jack In The Box bear no resemblance to real tacos, but you like them anyway…

1 lb. ground beef

1/2 medium onion, chopped

1/2 cup ketchup

2 teaspoons chili powder

8 oz cheddar cheese, shredded

10 corn tortillas

1 10 oz can enchilada sauce (I prefer mild)

Sliced olives (optional)

Cook the hamburger and onion until the hamburger is browned. Drain off the fat. Stir in the ketchup and chili powder. Fry the tortillas in oil until warm and soft but not crispy. Place on paper towels to absorb as much oil as possible. Place two heaping tablespoons of hamburger on each tortilla and a little cheese, roll up and place seam side down in a baking dish coated with oil or cooking spray. Pour enchilada sauce over the top. Sprinkle on the remaining cheese. You can also add some sliced olives on top if you like, and you could add some black beans inside the enchiladas as well. Bake at 350 degrees for about 20 minutes, uncovered, until hot.
