This is a good bread that’s ready a little faster than most.
1-1/2 c warm water (105-115 degrees)
1 Tbsp honey
1 pkg yeast (2-1/4 tsp)
2 Tbsp coconut oil, melted
4 cups bread flour (or regular flour with 4 Tbsp gluten)
1-1/2 tsp salt
Mix the water, yeast and honey; let sit for 5 minutes until it bubbles. Put the rest of the ingredients in a food processor and blend while pouring in the liquid. Blend until it cleans the sides, adding a bit more flour if necessary.
Coat a bowl with oil. Dump in the dough ball and turn to coat. Cover with plastic wrap and let rise in a warm place 30 minutes. On a lightly floured board, knead the dough a few times and form into a ball. Cover with a towel and let rise 30 minutes.
While dough is rising, put a cast iron skillet or pizza stone inside the oven and heat to 400 degrees. Put the dough in the hot skillet, or on the pizza stone, and bake 30-40 minutes to an internal temp of 220 degrees.
