Guilt-free banana bread is good, but if you’re not counting calories and have no food restrictions, you can’t beat the real thing.
1 cup sugar
1/2 cup butter, softened
3 very ripe bananas, mashed
2 eggs
1-1/4 cup flour
1/2 tsp salt
1 teaspoon baking soda
1/2 chopped walnuts or pecans, optional
Cream the sugar, butter, salt & baking soda. Add bananas and eggs and beat until fairly smooth. Blend flour into banana mixture. Do no over mix. Stir in nuts if desired. Pour into a greased loaf pan and bake a 350 degrees for about 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool a few minutes, then turn out to cool completely on a wire rack.
