Apple Pecan Pancakes

I didn’t bother with a photo because everybody knows what pancakes look like. If you want to impress someone, you could present a stack of pancakes topped with chopped pecans and sauteed apple slices, and everyone would ooh and aah. But at our house all they care about is getting food in their bellies as fast as possible.

2 cups flourt

1 cup sugar

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/2 tsp ginger

1/2 tsp mace

1/2 tsp cloves

2 eggs

1-3/4 cups buttermilk

3 Tbsp oil

1-3/4 cups shredded apples

1/2 cup chopped pecans

 

Cook by 1/4 cup full of batter. Top with butter and maple syrup (and sauteed apples and pecans if you’re an overachiever).
