Baked Western Omelet

Quiche meets omelet. Same taste, easier prep. This serves four. I just cut the recipe in half and bake it in a little pan for me and Mr. Man. You can use any color of peppers you have on hand, or substitute bacon or sausage for the ham. Make it to suit yourself. You can prep the egg mixture days in advance, multiply the recipe to feed a crowd. Great for a holiday brunch or really easy Christmas morning.

1/2 cup finely chopped green bell pepper

1/2 cup finely chopped red bell pepper

1/3 cup finely chopped onion

2 tsp olive oil

8 large eggs

1/3 c milk

1 cup diced ham

1/2 c cheddar cheese, shredded

1/2 tsp salt or seasoned salt

1/4 tsp pepper

Saute the bell pepper in olive oil until it starts to get tender. Add the onion and continue cooking until veggies are soft and the onions are translucent, cool.

Whisk the eggs, milk, salt and pepper well. Stir in the ham and cheese. Pour into a greased 9 X 9 baking dish. Bake at 400 degrees for 25 minutes or until set.
