Butterscotch Oatmeal

This recipe is supposed to serve three. At our house, make that two little piggies. You don’t need to add milk or sugar, unless you want to. I like to top it with berries or sliced bananas, and a sprinkle of chopped nuts. Want to get fancy? You could top it with sliced bananas, sprinkle the bananas with a little sugar, then get out your torch and make a little oatmeal brulee. Maybe with a few berries on top of that. Takes oatmeal to a whole other level.

1 egg, beaten

1-3/4 cup milk

1/4 cup packed brown sugar

1 cup rolled oats (not quick cooking)

1 Tablespoons butter

In a saucepan over medium heat, whisk together the egg, milk and sugar. Stir in the oats. Bring to a boil and cook until thick. Stir in the butter.
