Ebelskivers

 

For this recipe you’re going to need a special ebleskiver pan.

Ebleskiver translates to “apple fritter”, so cooked apples are the most popular filling, but you can fill them with anything you like, or nothing at all. They’re pretty easy to make, taste great, and look really impressive.

2 cups flour

1 tsp baking powder

1/2 tsp salt

1 Tbsp sugar

4 eggs, separated

2 cups milk

4 Tbsp butter, plus more for cooking

Beat egg whites until stiff but not dry. Combine dry ingredients. Whisk egg yolks, milk and butter together. Combine wet and dry ingredients, then fold in egg whites.

Heat the pan over medium heat. Put 1/4 tsp melted butter in each well of an ebelskiever pan. Pour 1 Tbsp batter into each well. Add 1 tsp filling of choice (cooked apples, jam, Nutella, peanut butter, whatever you’d like). Pour 1 more Tbsp of batter over the top. Cook 3-5 minutes until the bottom is brown, the top has bubbles, and you can see the edges drying. Then, using skewers or chopsticks, one on each side, sort of roll the ebelskievers over. One skewer pokes down one side of the ebelskiever while the other rolls it over. You can poke any bits in that are sticking out so you have a smooth little ball. Cook another three minutes until done. Serve with syrup or whipped cream. If you get the hang of it, you can roll these as they cook so you end up with a round ball and no seam around the middle. You can find a YouTube video to show you how to do that, but I’m fine with a seam. They taste the same either way.
