Shoyu Chicken

This recipe makes enough for 8-10 people. I usually make it with one pack of chicken thighs, which is about 1.5 pounds, and just make 1/4 of the sauce. It’s enough.

5 pounds boneless, skinless chicken thighs

1 cup soy sauce

1 cup brown sugar

1 cup water

4 cloves minced garlic

1 onion, chopped

1 Tablespoon grated ginger

1 Tablespoon pepper

1 Tablespoon dried, crushed oregano (not ground)

1 teaspoon paprika

Mix up the sauce in a bowl. Wash, and snip the excess fat off of the chicken thighs with some kitchen shears. Add the chicken to the bowl, stir to coat, and marinate all afternoon. Grill and enjoy!
