This is a old recipe from Apple Hill, an apple orchard near Placerville, CA. The cake is really good by itself, but I’ll include a recipe for cream cheese frosting, which I think is overkill but to each his own. You can bake it in loaf pans as an apple bread. You can serve it topped with whipped cream or a drizzle of caramel sauce. To each his own.
2 c sugar
1/2 c oil
2 large eggs
4 cups diced apples
2 c flour
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1 tsp vanilla
1/2 c chopped pecans or walnuts (optional)
Mix everything but the apples, flour and nuts together. Stir in the rest. Bake in a 9 X 13 pan that’s been greased and floured at 350 degrees for one hour.
FROSTING:
3 oz cream cheese, softened
1 T milk
1 tsp vanilla
2-1/2 c powdered sugar
