Aunt Violet always made a cookie tin full of these when we took our annual Thanksgiving trip to the desert. And a tin of chocolate chip cookies. And a couple of cakes. And a couple of pies. And enough food to feed an army. Fond memories! These are great because you can freeze the dough, or keep a roll in the fridge to slice and bake when you want some nice warm cookies fresh from the oven.
1-3/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c butter, softened
1 cup packed brown sugar
1 egg
1 tsp vanilla
2/3 c chopped pecans or walnuts.
Beat everything together except for the nuts, then stir them in last. Shape into two logs and wrap in plastic wrap. Chill at least four hours. Slice 1/4 inch thick and bake at 375 degrees for 8-10 minutes.
