This recipe is for a 12″ tart pan.
Crust:
3/4 cup softened butter
1/2 cup powdered sugar
1-1/2 cup flour
Combine ingredients. Press into the bottom and up the side of the pan. Bake 25-28 minutes at 300 degrees, until golden brown.
Filling:
10-12 oz white chocolate, melted & cooled slightly
1/4 cup cream
8 oz cream cheese, softened
Beat the white chocolate and cream cheese until smooth. Beat in the cream. Spread on the bottom on your cooled crust. Top with fruit of choice. You can make a pretty pattern with sliced fruits if you want. I just mix together about 3 cups of mixed berries (strawberries, blueberries, blackberries, raspberries, whatever you have) and just pile them on the crust.
Glaze:
1/2 cup pineapple juice
1/4 cup sugar
1 Tbsp corn starch
1/2 tsp lemon juice.
Cook until thickened, cool, then drizzle over berries. Place in refrigerator until cold.
