This is the best chocolate chip cookie recipe I’ve found that has no wheat and no sugar. These are NOT going to give regular chocolate chip cookies a run for their money, but if you have to make a dessert for someone who is diabetic & gluten free, or on a keto diet, these are the best I’ve found. They come from the “gnom gnom” website.
Sift Together:
120 grams blanched almond flour
16 grams coconut flour
1 Tbsp arrowroot powder
1/2 tsp xanthan gum
1/2 tsp baking soda
1/2 tsp salt
Beat well:
150 grams butter, room temp
130 grams locanto brand golden monkfruit sweetener or equivalent
1 tsp molasses (optional)
1 tsp vanilla
1 egg
Beat half of the flour mixture into butter mixture, then stir in the rest
Stir in 85-120 grams sugar free chocolate chips &
70 grams chopped pecans
Chill dough for half an hour, then shape into balls and flatten slightly. Bake on parchment paper at 350 degrees for 10-13 minutes depending upon size. Makes 12-18 cookies. Cookies freeze well and are great right out of the freezer.
