Sometimes the old recipes are the best. This is the old Quaker Oats cookie recipe, time tested by generations. I’m just posting it to my website so I don’t have to go hunting through my recipes to find it. This recipe makes three dozen cookies.
1-1/4 cup butter, softened (2-1/2 sticks)
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1-1/2 cups flour
3 cups old fashioned oats
VARIATIONS: Stir in one cup raisins or chopped nuts. Omit the spices and stir in one cup semi-sweet, butterscotch, or peanut butter flavored chips.
Cream everything but the flour and oats together. Beat in the flour, then stir in the oats. Shape into walnut sized balls or just drop by rounded tablespoonfuls onto an ungreased cookie sheet. (I like to bake them on parchment paper) Bake about 10 minutes more or less, depending on whether you like them chewy or crispy. Cool one minute on the cookie sheet, then transfer to a wire rack to cool completely.
