Everybody seems to love these. Great for dunking in your coffee. I just don’t tell them about all the butter!
1 cup butter, softened
3/4 cup powdered sugar
1/2 tsp vanilla
2 cups flour
1/4 tsp cinnamon (optional)
1-1/2 cups English toffee bits (with or without chocolate. Heath makes them.)
Cream the butter and sugar. Beat in everything except for the toffee pieces. Stir in the toffee last.
Shape into a log, roll up in waxed paper and chill. Slice in 1/4″ thick rounds and bake at 325 degrees for 13-15 minutes.
