Chicken Fajita/Burrito

300g (about .66 lbs) cubed chicken

1/4 tsp pepper

1/2 tsp smoked paprika

1/4 tsp dried thyme

1 clove garlic

3 T soy sauce

1 onion, diced or finely sliced

1 bell pepper (any color or mix colors), diced or finely sliced

cheddar cheese, shredded

giant flour tortillas

Mix together everything except the onion, bell pepper and cheese, and marinate the chicken 15 minutes or longer.

Pour the chicken and the marinade into a skillet, non-stick or lightly oiled. Fry until the chicken is about halfway done, then drain off the liquid onto the chopped onion and bell pepper. Continue frying the chicken until browned, then reserve. Pour the onion and bell pepper into the same skillet and cook until tender. Drain off the excess liquid and continue cooking until well done and starting to caramelize.

Mix the chicken and veggies together. Place in the center of a flour tortilla and top with cheddar cheese. Fold the tortilla up to make a large, flat burrito. Butter one side and place in a hot skillet to brown about 3-5 minutes. Meanwhile butter the other side, then flip the burrito and brown the second side.
