Spinach Salad

Pretty hard to beat spinach salad, because it has BACON! Served with some homemade foccacia, and I could just pass on the rest of the meal. OK, you could just buy some french bread, but sometimes it’s nice to go whole hog and just pig out. Hmmmm must be the bacon talking.

Pretty hard to give you a spinach salad “recipe”, because the only real recipe you need is for the dressing. You dump some baby spinach in a bowl. Use your kitchen shears to snip in pieces of green onion. Toss that with dressing and put on individual plates. Sprinkle some chopped up hard boiled egg over the top, sprinkle with some bacon, and you’re done.

SPINACH SALAD DRESSING:

1/8 cup sugar

1 tsp salt

1 tsp dry mustard

1/3 cup apple cider vinegar

1/2 cup salad oil

COOK BACON: I like to cut my bacon into little pieces with kitchen shears, then fry until crispy. Place a sheet of foil on the counter and cover it with paper towels. Remove the bacon from the pan with a slotted spoon, and drain it on the paper towels. Then you can just roll up the bacon in the foil to keep until ready to use.
