Zucchini With Parmesan

Trying to figure out more ways to get rid of all the zucchini in our garden. Just one plant, but I can’t even keep up with that! This is the quickest and easiest way I’ve found yet. Delicious side dish and cooks in less than ten minutes!

2 medium zucchini cut in 1/2″ thick slices

2 Tablespoons of olive oil

3/4 tsp salt

1/2 tsp pepper

1 tsp garlic powder

1/2 cup fresh grated Parmesan cheese

Toss the zucchini with the first four ingredients. Place in a single layer on a large baking sheet. I line the pan with non-stick foil just to make sure it nothing sticks, but you don’t really have to. Sprinkle the parmesan cheese over the top of the zucchini. Bake at 450 degrees for 5 minutes, then broil until the cheese is browned.
